Cheesy Quinoa and Bean Bake
This is what I cooked up for supper tonight. We ate it on plates topped with sour cream and hot sauce, but I also think it would be great in tortillas topped with taco fixins or served with chips as a warm appetizer.
Cheesy Quinoa and Bean Bake
2 15-ounce cans of beans (black, pinto or a combo of the two)- drained
1.5 cups of cooked quinoa*
3/4 cup salsa
1 cups shredded cheddar or Mexican blend cheese
1 can diced green chilis
1/2 tsp cumin
1/2 tsp garlic salt
cayenne pepper to taste
sour cream and salsa for topping
Preheat oven to 400 degrees. Spray a baking pan with cooking spray. The pan just has to be big enough to hold all of the mixture. I used a tart pan, but a 9x13 pan would work too.
Mix all ingredients together (only 1 cup of cheese) in a large bowl and then place in prepared pan. Cover with foil and bake for 20-25 minutes in oven. Top with remaining 1 cup of cheese and bake for another 5 minutes.
Serve with chips, sour cream, salsa, green onions, whatever!
* To cook Quinoa, boil 1 cup water and add 1/2 cup quinoa. Cover and simmer for 10-15 minutes.
