Eggs In A Basket

I took some time this afternoon to prepare these eggs for the kids.   Each egg is filled with something that helps to illustrate a different story from Jesus' ministry and apply it to their lives.  I usually feel like I don't have time to prepare things like this for them, but when I actually just think ahead and do it, it's not that big of a deal.  And of course its worth every minute and then some to be able to spend time talking about Jesus with them.

Upon recommendation of  Soule Mama , I purchased this book off of Amazon.  It arrived yesterday!  It looks fabulous and I have already read a lot of the sections on vegetable gardening.  As a novice gardener, I have been looking for a handbook to help me along the way, and I think this will be all I need- ever.  I HIGHLY Recommend it! Other exciting new things:  Guess who's hair is now finally long enough for pigtails! Add caption

Rhubarb Pie!

I thought I had used up all of the rhubarb in my freezer but guess what?!?  I found another bag!  I deliberated about what I should do with it... Cake?  Pudding Cake?  Crunch?  Crisp?  Pie?  Pie.  Yes pie, there is nothing better than a piece of rhubarb pie. This is my favorite recipe for Rhubarb Custard Pie.  It is soooo good.  You never need to look for another recipe for Rhubarb pie- this is the best one.

Little Moments

Here are some little moments I enjoyed this week... Holland woke up from her nap one afternoon and when she saw Fisher, reached out to him and said "My Brother."  Sunshine, coloring books and a yummy snack More Big Brother sweetness Bedtime tricks:  Holland jumped up and down in her crib so much one night that she scooted her crib almost out the door.

Cheesy Quinoa and Bean Bake

This is what I cooked up for supper tonight.  We ate it on plates topped with sour cream and hot sauce, but I also think it would be great in tortillas topped with taco fixins or served with chips as a warm appetizer.  Cheesy Quinoa and Bean Bake 2 15-ounce cans of beans (black, pinto or a combo of the two)- drained 1.5 cups of cooked quinoa* 3/4 cup salsa 1 cups shredded cheddar or Mexican blend cheese 1 can diced green chilis 1/2 tsp cumin 1/2 tsp garlic salt cayenne pepper to taste sour cream and salsa for topping Preheat oven to 400 degrees.  Spray a baking pan with cooking spray.  The pan just has to be big enough to hold all of the mixture.  I used a tart pan, but a 9x13 pan would work too. Mix all ingredients together (only 1 cup of cheese) in a large bowl and then place in prepared pan.  Cover with foil and bake for 20-25 minutes in oven.  Top with remaining 1 cup of cheese and bake for another 5 minutes. Serve with  chips, sour cream, salsa, green onions, whatever! * T

Painting With Vegetables

Notice that Jenny The Dog, always willing to lend a hand, is ready and waiting for Claire to drop a potato, carrot or cauliflower leaf.  My floors would be a mess with out that dog.  What a good girl. What a nice way to pass the 4-5 o'clock hour.  The kids thought this was a hoot and I had quite a bit of fun perfecting my skills with an asparagus paint brush.

The Help

I would highly recommend obtaining a 5 year old daughter.  I asked Claire to sort our socks (please don't judge me by the enormous amount of mis-matched socks we have).  Claire accepted the challenge with glee and when straight to work.  She separated the socks by owner and made quick work out of this task.  I had wanted to take a picture of all of the matches she made, but by the time I checked on her again, she was already putting everyone's socks away in their respective drawers.  I hadn't even asked her to do that- what a little worker!  I was so proud.  And thankful to have some socks again.

In My Kitchen...

To celebrate the end of my 5-day working week and return to being a stay-at-home mom (80% of the time) I spent most of my day in the kitchen.  You can easily tell this by 1. The amount of bowls and pans in my sink 2. bythe fact that I ran my dishwasher 3 times and 3. By taking in the state of things in the rest of the house- but that can be dealt with tomorrow. Today, I baked and mixed and simmered and at the end of it all, I made three delicious things. First I made Lemon Puppy Chow .  Yes, it was as good as it sounds.  I can't stop eating it!  I had to give some away to my neighbors just to save myself! Next I made Honey Oatmeal Bread from the recipe section of my Kitchen Aid Mixer Owner's Manual. For supper, I tried a new recipe for Black Bean Soup, adapted from Gourmet Today by Ruth Reichl. Mexican Black Bean Soup 1 pound dried black beans, rinsed 3 quarts water 1 3-inch sprig of cilantro Salt 1-15 ounce can of tomatoes (I used fire-roasted) 1 clove garli

A Sunday Afternoon

We had a quiet and relatively calm Sunday afternoon indoors today.
