Our Trip to Paradise

Lance and I just returned from a trip to Mexico with our best buddies Kurt and Emily.  We were both married in 2000, so we had 20 years of marriage to celebrate between the four of us :)  We have taken several trips with them, but most of them had the following in common:  1)High altitude 2)physical exertion 3) me being pregnant.  While hiking through waist-deep snow in the Rockies with an 18-week-old bun in the oven on our last big trip (we had gotten lost on a ski trail), I suggested that the next trip we took meet the following criteria:  1) Warm 2) Relaxation 3)Me NOT being pregnant. Several years and three children later (between the two couples), there we were in Puerto Vallarta Mexico.  We snagged an UNBELIEVABLE deal on price-line for rooms at the Mariott right on the ocean, and we relaxed, ate, talked, ran on the beach, and played for the next four days. Homemade Valentines

I decided to make Homemade Valentines for the kids this year.  While Lance and I were caught up on "Glee," I hauled Claire's gigantic collection of markers downstairs with me along with some paper and happily drew and colored away for the next hour.  I am no artist.  However, I had tons of fun coming up with  cards that I thought each of them would get a kick out of.  Inside, I listed 5 things that I loved about them.  Valentines morning I baked cinnamon rolls and gave them their cards. Here's what I came up with... Ok, this is probably my favorite.  Fisher thought it was hilarious.  I am always trying to steal a kiss from him these days, and he's pretty good as acting like he thinks it is disgusting (but I can tell he's glad that he's Mommy cares enough to try anyway). Feelin' Fancy

Claire and I went on a Mommy-daughter date a couple Saturdays ago.  I had seen that a local children's toy store was putting on a "Fancy Nancy Storytime."  We put our best dresses on and headed downtown. We weren't the only mommy and daughter pair out that morning.  The toy store was SWARMING with little girls in their frilly best.  From what I could tell, I was the only Fancy Mommy, but that was ok.  We stayed for story time, but decided to go for coffee instead of staying for the craft.  I haven't done this type of thing with just Claire before.  Usually our "girl time" has just consisted of grocery shopping or errand running (which she likes to do).  Sometimes we just have "coffee" together while folding laundry together during the baby's morning nap.  Those are dear times spent together with my girl, but it felt GOOD to do something special.  To make a fuss over her, and over myself for her sake.  I could tell it made her feel special,

Wheat Berry Salad

Mmmmm..... wheat berries.  I crave these lovely things.  Wheat berries are the entire wheat kernel.  They are wonderfully chewy and chock full of fiber.  I came across this recipe for wheat berry salad last year, and it has since become one of my favorites.  When I snack on wheat berry salad at night instead of the ice cream and cookies that were also in my kitchen, you know it's got to be extraordinary!
